Happy International Coffee Day!: Chicken with Coffee-BBQ Sauce

Coffee BBQ SauceYesterday was International Coffee Day and to celebrate I made a coffee-BBQ sauce.

International Coffee Day reportedly started in 1993 and has reached international status. It’s so much more than a beverage now, it has been incorporated into baked goods and meals.  That being said, I’m not a  fan of the bitterness of coffee so I added some brown sugar to balance the flavours. You can fool around with the flavours you like, cooking is all about adding your own personality, so have fun!

Chicken with Coffee-BBQ Sauce

1 lb chicken breast, cut into bite sized pieces.

1 cup flour
1 tsp paprika
1 tsp ground thyme
1 tsp baking powder
½ tsp salt
½ cup water
½ cup milk

BBQ Sauce:
2 cups ketchup
½ cup brown sugar
¼ cup espresso

  1. Combine the flour, paprika, thyme baking powder, and salt in a bowl. Add the water and milk while whisking, and keep stirring until smooth.  Place all the chicken in the batter and let sit until the oil is heated up.
  2. In a deep pan, or wok, heat vegetable oil over high heat.
  3. While you are waiting for the oil, combine all the ingredients in a small saucepot over low heat. Whisk until incorporated.
  4. Deep-fry the battered chicken until it’s golden brown and floating. Pat the excess oil off, and place in a bowl with the BBQ sauce. Mix until evenly coated.
  5. Serve and enjoy.
