Pancake Tuesday is upon us! I’ve been using this recipe for a couple years; it’s quick and got me off the bland boxed mix. The tradition of Pancake Tuesday originated with the purpose of eating everything fatty and rich the evening before Ash Wednesday, which marks the beginning of the Lenten season. The Lenten season usually calls for fasting, so pancakes allowed for one last hurrah until Easter Day.
1 cup all purpose flour
1 tsp ground cinnamon
2 tbsp granulated sugar
2 tsp baking powder
1 tsp salt
¾ cup milk
2 tbsp vegetable oil
- Mix all the dry ingredients in a bowl.
- Add the milk egg and vegetable oil and whisk until smooth.
- In a non-stick pan on medium heat, scoop the batter onto the pan and brown on both sides.
- Serve with maple syrup or butter.
Makes approximately 8 pancakes.
