Happy National Sugar Cookie Day!

I usually make sugar cookies during Christmas time, thus the sugar cookie wreath, but it’s National Sugar Cookie Day, so I thought I’d share my recipe.

Just a quick tip: make sure the butter is straight out of the fridge, if it’s room temperature the cookies will spread and lose their shape.

Sugar Cookies

¾ cup butter
1 cup of white sugar
2 eggs
½ tsp vanilla extract
2 ½ cups all-purpose flour
1 tsp baking powder
½ tsp salt

1. In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla.
2. Stir in the flour, baking powder and salt. Cover and chill dough for at least an hour (or overnight)
3. Preheat the oven to 400 F. Roll out dough on floured surface ¼ to ½ inch thick. Cut into shapes with any cookie cutter.
4. Place cookies 1 inch apart on un-greased cooking sheet. Bake 6 to 8 minutes in preheated oven. Cool completely.

Makes approximately 30 cookies.
